This was just one of three desserts I made over the Easter weekend. The other two were Cookies N’Cream Ice Cream and Blondies (forthcoming). It’s been a while since I made any sweets. But now – now I can go back to making anything that catches my fancy and the people will eat it. (The people being my family, not some random collection of humans.)
Now this is my kinda recipe. Everything gets dumped into one bowl and no need to add ingredients in a specific order. The brownies came out soft, moist, and super fudgy. Let’s do this!
Ingredients
- 2 cups Sugar
- 1 3/4 cups A.P. Flour
- 5 Eggs
- 1 cup Vegetable Oil
- 1/2 cup Cocoa Powder
- 1 tsp Salt
- 1 tsp Vanilla Extract
- 1 cup Semi-Sweet Chocolate Chips
- handful of crushed Walnuts (optional)
The Lazy Method
Preheat oven to 350 degrees.
Except for the chocolate chips, mix everything together. As much as I tried to be lazy I still first mixed all the dry ingredients then added the wet ones. Mix well with an electric mixer.
Confession: I always write down my recipe in a small notebook to refer to while cooking. In the directions I had scribbled “Mix well.” Since I started with a rubber spatula, I just continued along stirring with it. So my batter didn’t quite ‘come together’ and look smooth. Eh, I’m more of a cook, not a baker … I’m working on it!
Pour batter into a pan (9×13) that has been sprayed with nonstick spray. Sprinkle the Chocolate Chips on top. I also sprinkled some crushed walnuts on top of half of the pan.
Bake for 30 min. You could check it a few minutes before, but the 30 minutes is golden. It even worked with my barely incorporated batter. The brownies are done when you can stick a toothpick or fork and it come out clean – mostly.
