Hickory Smoked Brisket
I made this for Thanksgiving one year. After applying the rub, I forgot which side the fat cap was on. I figured I had a 50-50 chance of getting it right. Yeah… I smoked it fat side down. The fat which is supposed to melt down through the brisket (when properly placed on top) just dripped into the pan. Thanksgiving was not ruined, but the brisket was dry and we had to slather the BBQ sauce on it.

Smoked Moose
A few weeks ago Dad went to North-Of-Nowhere, Canada for a moose hunt and met with success. I asked him to try and save a few pounds to bring home. After the warm and fuzzies of his return wore off, I was faced with 80 lbs. of one moose shoulder. Fortunately the shoulder came in various sized pieces. I kept my eye on this piece and made sure to claim it before anyone else in the FAMILY asked for it.
