Kaddu Ka Halwa (Pumpkin Pudding)

If after reading this you have a sense of deja vu, that’s because this is basically the Gajar Ka Halwa recipe with pumpkins instead of carrots. Please reference this recipe if you’d like detailed pictures. As you can see from the ingredients below, I was unsuccessful in procuring two sugar pumpkins. I guess if you try to buy whole pumpkins after Halloween, it’s slim pickin’s. Instead, I substituted a butternut squash for the other sugar pumpkin. Any sweet squash will work, as long as you end up with at least 2 cups of fruit and adjust the amount of sugar accordingly. Read the rest of this entry

Dum Chicken Biryani

Alright… Now that you’ve got all the jokes and snickers out of you let’s talk about this biryani. Dum is a technique where you allow the dish to cook in its own steam. So when your mother rattles off a recipe and ends it with “…and put the pot on dum for 20 minutes,” it means cook on low heat with the lid on. However, as you will read here, the dum in this recipe is going to be baking. You can keep the pot on the stove top for the entire cooking process, but I don’t know how long you would cook it on low heat – so you’re taking your chances with that way. Read the rest of this entry
