Beer-Braised Moose Pot Roast & Baked Sweet Potato

I’m slowly cooking my way through the moose we’ve got in the freezer. Though, the only way I can deal with this meat is by brining it first. It’s the smell that gets me every time and no matter what you braise it in, a brine is first needed to cut the scent and breakdown the lean muscle in order to render a more moist (er, moister) meat. I did a braised moose before, but was unhappy with the results. Sure it tasted great, but underneath the red wine, there was that subtle hint of gamey-ness that sort of turned my appetite.

Braised Moose: On The Fly!

We had a major upset this Super Bowl Sunday – the Groundhog saw his shadow! Let’s take a moment to come to grips with another 6 weeks of winter.

Okay, moment over.

I’ve been asked to make moose in the oven. Well, here we go. I love braising in the winter so this was a great time to try moose again. As the title suggests, I just went with my gut feeling and tossed thing in willy-nilly. Okay, not that haphazard, I did jot down what I was doing so I could post it for you all to see. Smoked Moose

A few weeks ago Dad went to North-Of-Nowhere, Canada for a moose hunt and met with success. I asked him to try and save a few pounds to bring home. After the warm and fuzzies of his return wore off, I was faced with 80 lbs. of one moose shoulder. Fortunately the shoulder came in various sized pieces. I kept my eye on this piece and made sure to claim it before anyone else in the FAMILY asked for it.
