Grilled Pizza

Dear Reader, it’s been too long and I only have myself to blame. Oh there was definitely cooking happening during the silence, but my lazy self did not have the energy to blog. Shame, shame. With winter upon us, I can get back to the kitchen (or grill) and get some work done.

I made this for Labor Day. (Yes… that long ago) I rolled out about 7 mini pizza potentials. They had different toppings where some were savory and others sweet (post forthcoming). This is another solid recipe that you can build off of. The main part is the pizza dough and the following recipe renders a firm crust with a warm, yeasty interior. If you prefer a firmer crust, either roll out the dough thinner or cook it a bit longer on the grill.

Ingredients

For the Pizza Dough:

  • 2 1/4 tsp Dry Active Yeast
  • 2 tsp Sugar
  • 1 1/2 cups warm Water, divided
  • 3 tbsp Extra Virgin Olive Oil
  • 1 1/2 tsp Salt
  • 1 tsp White Vinegar
  • 3 3/4 – 4 1/4 cups All Purpose Flour

Toppings:

  • 12 oz fresh Mozzarella
  • Pizza Sauce
  • shredded Parmesan Cheese
  • sliced Tomatoes
  • fresh Basil
  • Grilled Chicken

Method

Pizza Dough: Combine: Yeast, Sugar, 1/2 cup Water. Whisk until yeast dissolves. Let rest for 5 min. Add 1 cup Water, Olive Oil, Salt, Vinegar. Slowly add Flour – about a 1/2 cup at a time. Knead 7-8 min until smooth and elastic. Cover with a dishcloth and place in a warm place for 1 1/2 to 2 hrs.

This will produce a lot of dough. Roll out the dough to your desired shape and thickness. I tried to make rectangles, but well, the pictures explain my abilities with a rolling pin. I went for a 1/2″ thickness so that the pizza doesn’t fall apart with the weight of the toppings. Place on wax paper, brush with Olive Oil and transfer to a grill (oiled side down) set at medium heat. Do not forget to remove the wax paper. Grill for 2-3 min. You want some nice grill marks. Remove from grill. Place toppings on the grilled side. Return to grill again for another 4-5 min. This is a delicate process. You want the toppings to melt and cook, but you also need to take care that the underside of the pizza doesn’t burn. Although, who doesn’t like a little char on their pizza??
