Sorry gentle Readers. I’ve been behind in my blogging due to the sunshine, warm weather, and lack of semi-entertaining Sunday t.v. programming. Usually, I write on Sunday evenings while watching t.v. And, well, summer is here and I’m sure you all know how it is.
This chicken was originally supposed to be a Margarita Grilled Chicken. Everything was going well until I squeezed all the juice from the orange into the marinade after zesting it. The orange zest was part of the recipe – the orange juice not so much. But the beauty of cooking is that I can change the name of what I’m making to fit the outcome. (Devious!)
Due to the amount of citric acid in the marinade, I suggest not marinating the chicken for over two hours. The result will be a dry and tough bird if you do. This is a quick marinade for a lazy afternoon. So let’s check it out.
Ingredients
- 4 skinless Chicken Breasts
- 1 tbsp Olive Oil
- Zest of one Lime
- Juice of one Lime
- Zest of one Orange
- Juice of one Orange
- 1 tsp Garlic Paste (or one clove minced)
- 1 Serrano Chile (minced)
- 1 tsp Cumin
- Salt and Black Pepper, to taste
- 1 cup of BBQ Sauce (Jim Beam is my sauce of choice)
Method
Make the marinade by combining all of the ingredients except the Chicken and BBQ Sauce. Marinate the Chicken for at least 30 min to up to 2 hours.
Grill on medium high for 5 min each side. Then slather with BBQ Sauce and allow to cook for another 2 min on each side. Take off the grill and let rest for 10 minutes before serving.
