Hash Brown Waffles

This will sure grab the attention of your sleepy brunch guests. My favorite part of hash browns are the cooked, crunchy bits. After seeing a waffle iron used like this I thought the idea was great (and why hadn’t I thought of it before). There’s sooo much more crispy browns in this method.

The timing on this crucial. No one likes cold and soggy hash browns. The limiting factor is how long the waffle iron takes. All together this took 20 minutes with 7-8 minutes on the iron. So plan accordingly.

Ingredients

  • Potatoes
  • Salt
  • Cooking Spray (preferably Canola or Vegetable Oil)
  • Paprika (optional)

What to do

Thoroughly wash the potatoes. Dry and grate them with the skin on. You could use a food processor, but I prefer the box grater.

Place the shredded potatoes on paper towels (you may need to work in batches) and wring out the excess water.

Sprinkle with Salt and Paprika. Place on hot waffle iron and cook to desired brown-ness. I kept the waffle iron on the medium setting.
