I rolled out of bed Sunday morning. The house was quiet with everyone still asleep so I had free reign of the kitchen. Here is a quickie recipe that turns up some delicious scones. It works well as a foundation for scones that can be easily enhanced with the addition of dried fruit, herbs, cheese, etc. I chose to add the golden raisins last minute. Compared to regular raisins, golden raisins are slightly sweeter and plumper – but they’re pretty interchangeable. So no worries if you don’t have any on hand. This recipe is supposed to be low-key and these ingredients are usually lurking in every kitchen.
Ingredients
- 2 cups All-Purpose Flour
- 2 tsp Sugar
- 1 tsp Salt
- 1 tbsp Baking Powder
- 4 tbsp unsalted Butter, softened
- 3/4 cup Milk (I used whole)
- 1/2 cup Golden Raisins (optional)
Method
Preheat oven to 400 degrees. Line a baking sheet with parchment and place in the oven.
In a large mixing bowl, sift together the dry ingredients: Flour, Sugar, Salt, Baking Powder, and Raisins. I then cubed the Butter and tossed it in. With your fingers, work the butter into the mixture until it starts to come together. Note: From here on try to work the dough as little as possible. Add the Milk in two batches and continue to mix with your hands (they really are the best tools!) until the dough becomes a soft, slightly sticky ball.
Place the dough on a lightly floured surface and with a floured rolling pin, roll the dough until it is 1″ thick. Cut into triangles, or whatever shape you fancy. I was able to make 12 triangles.
Remove the baking sheet from the oven and place the scones on it. Bake for 8 min. Flip and bake for an additions 4 minutes or until golden.
Serve with butter, clotted cream, or jam. Enjoy!
