These cookies are a meal in themselves. Okay, I’m gonna attempt to justify their inclusion in every and all diet plans. Dark chocolate = antioxidants (that’s a given to every chocoholic). Oats – doesn’t every diet have oatmeal as a staple for energy? Coconut, I believe the new health fad is fat from coconuts are good/healthy in some way. But hey! Look at that, we’ve made such a delicious cookie into a healthy cookie.
For that, you deserve a second one. Here’s how you can make that happen…
Ingredients
- 1 cup Butter (melted & brought to room temp.)
- 1 cup Brown Sugar
- 1/2 cup Sugar
- 2 tsp Vanilla Extract
- 2 Eggs
- 2 cups all-purpose Flour
- 1 cup shredded Coconut (I used sweetened)
- 1 tsp Salt
- 1 tsp Baking Soda
- 1 1/2 tsp ground Cinnamon
- 2 1/2 cups Oats
- 1 1/2 cups Dark Chocolate Chips
Method
Preheat oven to 350 degrees.
Start with the wet ingredients: Beat the Butter and Sugars together until smooth and creamy. Add the Vanilla and Eggs and mix until incorporated.
In a separate bowl we’ll do the dry ingredients: Sift together the Flour, Salt, Baking Soda, and Cinnamon. Mix the Coconut in with a whisk.
Now mix the dry ingredients into the wet ones. Beat until combined.
With a rubber spatula add the Oats and Dark Chocolate Chips. Using an ice-cream scoop, scoop out the dough onto a parchment lined baking sheet. Bake for 10 min. Let cool for 1-2 min on the sheet before removing to a cooling rack.
