I needed something to make for my cousin’s baby shower.
We were doing Mexican food and I had to come up with appropriate appetizers. The guac I’ve got down, but I wanted to try something new for the party and the blog. Oh, and did I mention I had less than a day to figure out what I was going to do and get it done.
If you want something quick, easy, and a guaranteed crowd-pleaser, I’ve gotcha covered:
Ingredients
- 8 oz Cream Cheese
- 8 oz Sour Cream
- 2 cups shredded Sharp Cheddar Cheese
- 5 Green Onions (include the white parts)
- 2 Serrano Chilies
- 6-8 Large Tortillas (I used Sun-dried Tomato & Garden Vegetable)
Process
Place all of the ingredients, except for the tortillas, in a food processor. Blend until smooth.
Spread the mixture on the Tortilla. The thickness of the spread is to your preference. Roll the tortilla and wrap it in a damp paper towel. Refrigerate for at least 30 min.
It’s best to slice the tortillas 1″ thick right before serving.
