The Brownie Cookie

Ladies & Gentlemen I present to you …  The Brownie Cookie. It’s not really a brownie and not quite a cookie. In fact it doesn’t really like to be confined to any one label except DELICIOUS (and even that doesn’t quite encompass its true self).

Ingredients

  • 4 tbsp Butter
  • 3 oz Unsweetened Chocolate (chopped)
  • 2 oz Semisweet Chocolate (chopped)
  • 2 Eggs
  • 3/4 cup Brown Sugar (packed)
  • 1/4 cup Sugar
  • 1 tsp Vanilla Extract
  • 3/4 cup all-purpose Flour
  • 1/2 tsp Baking Powder
  • 1/4 tsp Salt
  • 1/2 cup Chocolate Chips (experiment with different types) – I used semisweet morsels, but next time I might try cinnamon chips.
  • Powdered Sugar – for dusting

Method

Preheat oven to 350 degrees.

In a double boiler, melt Butter & the 5 oz of chopped Chocolates.
