Ladies & Gentlemen I present to you … The Brownie Cookie. It’s not really a brownie and not quite a cookie. In fact it doesn’t really like to be confined to any one label except DELICIOUS (and even that doesn’t quite encompass its true self).
Ingredients
- 4 tbsp Butter
- 3 oz Unsweetened Chocolate (chopped)
- 2 oz Semisweet Chocolate (chopped)
- 2 Eggs
- 3/4 cup Brown Sugar (packed)
- 1/4 cup Sugar
- 1 tsp Vanilla Extract
- 3/4 cup all-purpose Flour
- 1/2 tsp Baking Powder
- 1/4 tsp Salt
- 1/2 cup Chocolate Chips (experiment with different types) – I used semisweet morsels, but next time I might try cinnamon chips.
- Powdered Sugar – for dusting
Method
Preheat oven to 350 degrees.
In a double boiler, melt Butter & the 5 oz of chopped Chocolates.
Add Eggs, Sugar, and Vanilla Extract. Fold in Flour, Baking Powder, and Salt. Allow to cool to room temperature. Add Chocolate Chips.
Drop by the tablespoonful. Bake for 10 min.
Let cool then dust with Powdered Sugar for the full brownie effect.

Thanks! The tops had a thin layer of crunch, but then the rest of it was quite soft.
